Chicken Cacciatore
My husband makes this all the time. It is super delicious, low calories and I'm so sorry to say, but it's great to purge
4 chicken breasts
2 tbsp plain flour
1/2 tsp salt
1/4 tsp pepper
2 tbsp vegetable oil
1 onion, diced
2 cloves garlic, crushed
1 green pepper, chopped
1 tsp basil
1 tin chopped tomatoes
125 ml chicken stock
3 tbsp tomato puree
Coat the chicken in the flour, salt and pepper. Heat the oil in a large pan with a lid. Once the chicken is brown, remove from the pan and place on kitchen towel. Fry the onions, garlic and pepper until soft. Add the tomatoes, stock, basil and tomato puree. Return the chicken, bring to the boil, reduce heat, cover and simmer for 20 minutes.
